Chapter 7, the Swiss independent bottler known for hunting down overlooked Scottish casks, sourced this single grain from Cambus distillery in the Lowlands, distilled in 1988 and matured 33 years. Finished across three octave casks after time in a bourbon hogshead, it was named Whisky Bible's Single Grain Scotch of the Year. Nose of walnut, sugarcane, and banana leads to a citrusy, spiced palate of lemon curd and baking spice, finishing long on vanilla and raisin. Bottled at cask strength from 280 bottles — pour neat and take your time.
Tasting notes
Nose: Fresh walnuts, sugarcane, and coconut. Loose leaf tobacco. Prickly pears and a hint of banana.
Palate: Lemon curd and angelica. Fresh oak, cinnamon, and candy sugar.
Finish: Vanilla, tobacco, lemon curd and raisins.
