St. Lucia Distillers marries rum from Coffey column and copper pot stills, ages each separately in ex-bourbon barrels for about five years, then rests the blend in oak vats another six months. Expect rich amber color, cooked banana and caramelized fruit on the nose, chocolate and golden raisin through the mid-palate, and clove and tobacco trailing into a long, creamy finish.
