Overview

Chabasse XO Impérial comes from one of Cognac's old family houses, still blending in Saint-Jean-d'Angély from a trio of eaux-de-vie — Colombard, Folle Blanche, and Ugni Blanc — aged well into extra-old territory. The nose leans into tobacco, dried leaves, and old roses, while the palate turns unexpectedly spiced, with cinnamon, coconut, saffron, and ginger unfolding across a long finish. Pour it neat in a tulip glass alongside flaky pastry and let it slowly open up.
