This Cognac comes from the Chabasse house, a 17th-century estate in Saint-Jean-d'Angély still run by the Chabasse family. Its XO blend draws on eaux-de-vie from Petite Champagne and Fins Bois, aged long enough in oak to take on a deep amber hue with russet flashes. Expect dried-fruit and old-port aromas up front, giving way to a full-bodied palate of hazelnut, walnut, and soft florals. Pour it neat after dinner, alongside dark chocolate or roasted nuts.
