Amarone doesn't rush. Cesari dries its Corvina, Corvinone, and Rondinella grapes in ventilated lofts for 90 days, shedding nearly a third of their weight before fermentation even starts — that's what concentrates the raisin-and-jam intensity this wine is known for. A full year in Slavonian oak rounds it into something warm and layered: ripe cherry, dried fruit, toasted vanilla, a long grip of tannin on the finish. Pour it alongside braised short rib or a wedge of aged pecorino and let it stretch out.
