Cava de Oro's Añejo takes the one-year Añejo minimum and shrugs it off, resting 100% Blue Weber agave spirit roughly two years in a mix of American and French oak red-wine barrels at NOM 1477 in Jalisco's El Arenal. That extra time shows: an intense gold color, toasted oak and agave on the nose, and a silky palate of honey, maple, and a touch of chocolate leading into a long, smooth finish. Best sipped neat or over a single large rock.
