Tobalá is one of the rarest wild agaves used in mezcal, growing in the shade of Oaxaca's oak forests and taking six to twelve years to mature. Maestro Celestino Serenas roasts it in an earth oven, crushes it with a stone tahona pulled by donkey, and double-distills the mash in copper pots. What comes out leans nutty and caramelized, with toffee and roasted notes that fade into a smooth finish. Pour it neat in a small copita and give it a minute to open up.
