From Castello di Monsanto's Scanni vineyard — planted with Sangiovese in 1968 in defiance of Chianti Classico's old planting rules — comes a 100% Sangiovese IGT Toscana built to last. Fermented in steel with a délestage pumping-over regime, it spends roughly 20 months in large 3,800-liter casks before two further years resting in the bottle, which, fittingly, is Burgundy-shaped rather than the traditional Chianti fiasco. Silky and mellow young, it has the structure to reward a few extra years in the cellar. Pour it alongside braised beef or aged pecorino.
