Sangioveto and malvasia nera might not shout Super Tuscan, but Castellare's I Sodi di San Niccolò built its reputation proving native grapes could go toe-to-toe with the Bordeaux-blend crowd. The fruit comes off limestone vineyards above 1,400 feet, hand-harvested from stubborn ("sodi") ground near an old chapel on the estate, then aged roughly two years in barrique before more time settling in bottle. Expect deep garnet color, ripe cherry and dark berry framed by cedar and vanilla, with tannins that are firm but fine-grained. Pour it alongside braised short rib or aged pecorino.
