Savage & Cooke's Cask Finished Bourbon starts as a straight bourbon—75% corn, 21% rye, 4% malted barley—aged at least three years in charred American oak on Mare Island, California. Before bottling, a portion rests roughly two months in Cabernet Sauvignon barrels from Dave Phinney's wine program, layering in dark fruit and toasty spice atop classic caramel and vanilla. Bottled at 100 proof, it holds its own neat or over a single large cube, and turns an Old Fashioned into something a little more brooding.
Tasting notes
Mature yet lively and loaded with character. Aromas of orange peel and honey mingle with toasty oak and caramel notes that are consistent through the palate. Lush and complex, gorgeous start to finish.
