Cascahuín's Tahona Blanco skips the modern roller mill entirely — a two-ton volcanic stone wheel crushes the cooked Blue Weber agave, the old way, at the family's El Arenal, Jalisco distillery. That slower extraction keeps more of the agave's natural oils and minerality intact, showing up as honeyed agave, citrus, and a savory, slightly saline finish. Additive-free and double-distilled in copper pots. Pour it neat to taste the stonework, or build a simple Paloma to let the mineral edge cut through the grapefruit.
