Casa Mexa's Tahona Blanco is built the hard way: blue Weber agave, estate-grown in the Jalisco lowlands and matured six to eight years, gets roasted in a stone brick oven, then crushed under a traditional tahona wheel instead of modern mills. Natural open-air fermentation and double distillation in copper pot stills follow, bottled at a robust 48% ABV in small 500-liter batches. The result is a blanco with real texture and depth. Pour it neat to taste the old-school craft, or build a paloma that can stand up to it.
