Casa Mexa's Ancestral Blanco revives old-school tequila-making: blue weber agave from Jalisco's Arenal lowlands, cooked in an earthen pit oven, crushed by stone tahona, and left to ferment naturally in the open air before two passes through a copper alambique still. Distiller Marco Jauregui bottles each 500-liter batch in a handmade Damajuana vessel of recycled glass, and it earned a 95-point score at the San Francisco World Spirits Competition. Sip it neat to taste the process, or shake it into a classic margarita.
