Carrera Blanco comes out of the Highlands of Jalisco, where Fábrica de Tequila El Edén cooks 6-to-8-year agave in a brick oven for a full day, then lets it rest another day and a half before double-distilling in copper-lined stainless pot stills. That patience shows up in the glass: cooked agave and citrus on the nose, black pepper and warm baking spice on the palate, finishing clean and zesty. At 40% ABV, it holds its own neat or as the backbone of a margarita.
