Carmel Appellation Cabernet Sauvignon-Shiraz is a dry red blend from Carmel Winery, Israel's oldest winery, founded in 1882 by Baron Edmond de Rothschild. Grapes come from Carmel's cooler-climate vineyards in Israel's Upper Galilee, and the wine is aged 12 months in oak barrels after fermentation on the skins. Expect a medium-bodied glass with blackberry, warm spice, and bittersweet chocolate notes leading into a long, balanced finish. Pour it alongside grilled or seasoned steak, hearty winter casseroles, or a full-fat hard cheese board.
