Carbonero pours as a true Los Altos blanco: 100% Tequilana Weber agave, slow-cooked in stone ovens, extracted by roller mill, and fermented in stainless steel before a double distillation through copper pot stills at NOM 1580's Hacienda El Olvido. Expect a bright, herbal-fruity nose of pear, quince, dill, and lime, giving way to a palate of citrus and cooked agave layered with vanilla, basil, and olive. At 80 proof, it's built for a clean margarita or sipped neat to let that long, complex finish unfold.
