Acholado is Peru's word for a blend, and here floral Torontel meets earthy Quebranta, both grown at Destileria La Caravedo, a distillery that's been running since 1684. It's single-distilled from fully fermented wine (never pomace) and rested at least nine months with nothing added: no sugar, no water, no wood. Expect apple, lemongrass and golden raisin on the nose, then citrus, gentle spice and a peppery, floral finish. Shake it into a Pisco Sour and start there.
