Canerock - Spiced Jamaican Rum
Canerock is infused with natural spices such as Madagascar vanilla for its woody, gourmet notes, Caribbean coconut for sweetness and exoticism, and a touch of local ginger for spiciness and herbality. Each of these spices is infused separately so that it can fully express all its aromas. Once all the rums have been blended, they spend several months in Pedro Ximenez sherry casks. This maturing process will give the rum additional complexity and length.
Nose: Rich and complex, the nose is incredibly greedy and reveals pastry notes of vanilla, coffee, chocolate and coconut.
Palate: Almost as gourmand as the nose, on the palate one can distinguish the tannic notes of the ageing in oak barrels and a mixture of sweet spices. Notes of caramel and grape add to the whole and give this rum a nice complexity.
Finish: Powerful and sweet, the finish is all about contradiction. Both round and greedy, it reveals aromas of black cherry and coconut which are jostled by the freshness of notes of mint, ginger and clove to finish on a little taste of revival.
