Say hello to a joven espadin from Santiago Matatlan, Oaxaca, the beating heart of Oaxacan mezcal country. Maestro mezcalero Nicolas Hernandez works mature agave angustifolia, roasting the pinas in cone-shaped stone ovens over mezquite wood, then crushing them under a horse-drawn millstone. Wild-yeast fermentation in open wooden vats gives it a rich, layered, smooth character at about 43% ABV. Unaged, so the agave stays front and center. Sip it neat, or let it anchor a smoky Oaxacan cocktail.
