Borderies is the smallest of Cognac's six growing crus, and it's the one that lends this XO its signature floral lift. Camus draws the eaux-de-vie entirely from its own family vineyards, distilling and aging each parcel separately for at least ten years in French oak before the cellar master brings them together. Expect a velvety pour with vanilla, warm pastry, cinnamon and dried fruit, plus a whisper of violet on the finish. Sip it neat in a snifter.
