Calvados is Normandy's apple brandy, and Pierre Huet has been making it in the Pays d'Auge for generations. Their VS starts with estate-grown cider apples, fermented into cider that rests before a traditional double distillation in a copper pot still, then two to three years in oak. It's blended from several casks, so expect baked and fresh-cut apple, a whisper of warm spice on the nose, and a faint minty lift. Sip it neat after dinner, or stir it into a Norman-style cocktail.
