Calvados doesn't get much more classic than Pays d'Auge, and Lecompte has been mastering it in the heart of Normandy for about a century. This eau-de-vie starts from a blend of four Norman apple families—sweet, bitter-sweet, bitter, and sour—double-distilled in small traditional copper pot stills, then rested in petite 180-liter French oak barrels for deeper character. Expect ripe apple with a whisper of honey and almond and soft oak spice, all at 40% ABV. Pour it slowly after dinner, neat or over a single cube.
