Overview

Not tequila, by design: maguey Chato, an Angustifolia cousin of espadín, grown in Amatitán and bottled as destilado de agave outside the denomination. Steam-cooked in a 150-year-old brick oven, wild-yeast fermented, twice distilled, then nine months in American oak. At 46% it tastes like Jalisco before the rules.
