Most mezcal starts with espadín, but this one leans into Madrecuishe — a tall, cylindrical member of the wild Karwinskii agave family grown in Miahuatlán, Oaxaca. Its dense, low-water core gives the spirit a striking minerality. Made the traditional way, the agave is roasted in underground pits, crushed by a horse-drawn stone tahona, fermented with wild yeast, and distilled in copper pots. Expect ripe jalapeño, cocoa, and floral aromas over earthy beet and sweet potato. Bottled at 46%. Sip it neat, slowly.
