Meet the wild side of the Bozal Reserva lineup. Castilla is a scrappy cousin of Espadin — smaller, often foraged wild — grown around Nombre de Dios, Durango. It's made the ancestral way, roasted underground and distilled in clay pots, which shows up in the glass: weathered leather and wet-stone minerality on the nose, then cooked meats, chipotle, and ancho chili across a savory palate that finishes smooth with a curl of smoke. Sip it neat and slow, ideally with something off the grill.
