Meet Barril, a thick-leaved wild agave from the Karwinskii family so sturdy it's sometimes planted as fencing across Oaxaca. Bozal distills this one the ancestral way in a clay pot still down in Santa Catarina Minas, and the result is layered and lively: citrus and floral notes lead into hints of green pepper, with a palate that turns unexpectedly creamy, like banana. Sip it slowly and neat to let those fruit-and-pepper layers unfold, or build it into a mezcal cocktail with room to breathe.
