When Normandy's Calvados rules were first written in 1942, there was no minimum aging requirement — most apple brandy back then was bottled straight off the still, uncolored, known simply as "La Blanche." Christian Drouin revives that style: cider from more than thirty apple and pear varieties on the family's Pays d'Auge orchards, double-distilled in copper, then rested unaged in steel at 40% ABV. Bright and fragrant, all ripe orchard fruit. Serve chilled as an aperitif, or shake it into a cocktail that wants real apple character.
