Bird Creek went all-in on American single malt, and this single cask shows why. Founded in Portland by a former third-wave coffee roaster, the distillery builds whiskey around heirloom Baronesse barley, a German variety grown by Pacific Northwest farmers. Bottled at 92 proof from 100% malted barley, the Baronesse pours warm and bready, with notes of gingerbread, steeped tea, and milk chocolate on a leather-tinged finish. One barrel, its own personality. Pour it neat, add a drop of water, and let the malt open up.
Tasting notes
Nose: A spicy, well-integrated aroma with the mouthwatering scents of tarte tatin, polished oak, and vanilla custard.
Palate: The first sip delivers a warming hug to the palate before unfolding into mellow oak spice, rich grain sweetness and cinnamon spice. Blackberry pie and peppercorns lead into a long, warming finish.
