Full Pint barley was bred by Oregon State University for craft brewers — Bird Creek borrowed it for whiskey instead, malting it at Mecca Grade in Madras before turning it into a 100% malted single malt. Bottled at cask strength (115 proof, no dilution) after roughly four years in barrel, it pours dense with toasted hazelnut, caramelized sugar and vanilla pound cake, settling into dried fruit, citrus and a long cinnamon-chocolate finish. Add a few drops of water to open it up, or sip it neat.

"Tonight’s dram takes me to the Pacific Northwest to the Bird Creek Distillery in Portland, Oregon. Their Full Pint barley (a cross-breed of two barley’s by the “other OSU” – Oregon State University) dram at cask-strength opens with caramelized dark brown sugar, toasted nuts, graham crackers, vanilla, and dates; followed by malted milk chocolate, candied orange peel, maraschino cherries, and rum-soaked fruitcake; finishing with semi-sweet chocolate, cinnamon, toasted oak, and creamy dark caramel. The thick-clingy legs and heavy-cream full-mouthfeel deliver a long spicy dark camp-firey finish. This is the comfort “food” version of single malts – sip til you’re in a coma.
