Baronesse is a German barley bred for beer, nearly forgotten until growers on Washington's Palouse revived it — and Bird Creek, a Portland single malt project, turned it into whiskey. Munich-style malting brings out rich caramel character, and bottling at full cask strength (115 proof) lets it show: buttercream, dark chocolate, blackberry, and oak on the nose, baking spices and citrus zest on the palate, finishing long with black pepper and honey. Pour it neat, in small sips.
Tasting notes
Nose - A rich, dense and polished nose with aromas of toasted hazelnut, caramelized sugar, vanilla poundcake, mocha and dates.
Palate - Sweet and enveloping with toasted nuts, dried fruit, and vanilla accented with bright overtones of oranges and dried lemon peel. A long finish lingers on the gentle flavors of chocolate and cinnamon.
