Binyamina Reserve Merlot is a dry red wine from Israel's Upper Galilee, made by Binyamina Winery, one of the country's largest producers. Grapes are picked after nightfall for optimal ripeness, then destemmed and fermented in small tanks with two to three weeks of skin contact before 16 months in American and French oak. Expect deep red color, aromas of cherry and ripe plum layered with sweet spice and a touch of chocolate, and a full-bodied palate with mineral flintiness and a lingering finish. Pour it alongside grilled lamb or a hard cheese board.
