Belle Glos built its name on single-vineyard Pinot Noir, and Dairyman is the bottling grown on former pastureland in the Russian River Valley's southern alluvial plains — Dijon-clone vines planted in 2000, cooled by Pacific fog and afternoon breezes that stretch the growing season and concentrate the fruit. Expect bright cherry, brown baking spice, and a mineral edge under a velvety texture. Pour it with roasted duck or another rich game bird — the fruit and structure hold up to it.
