Tipsy Sauce - Chocolate Hard Sauce
Cognac gets serious billing, so a pear liqueur built on it feels wonderfully unexpected. Belle de Brillet, made by Maison Brillet in France's Charente, blends Williams pear eaux-de-vie with Cognac, water, and Madagascar vanilla sugar, and nothing else, with the equivalent of 18 pears going into every 700ml. The result is intense orchard fruit softened by Cognac's warmth. Pour it over ice as an easy aperitif or digestif, or let it lift a cocktail with real pear character.
