Cognac fans looking for something off the well-worn path will want to meet Prince de Didonne VSOP, made in Jonzac from Ugni Blanc grapes across the Petite Champagne and Fins Bois crus. It's double-distilled in a traditional swan-neck still and aged in Limousin and Tronçais oak. Expect honey, wildflowers, and yellow fruit on the nose, then a light, round palate with a bergamot twist that finishes like a cup of Earl Grey. Lovely neat or in a Sidecar.
