Armagnac gets far less spotlight than Cognac, which is part of the fun here. Labiette Castille comes from a single estate in Sorbets, deep in the Bas Armagnac heartland, where the Lesgourgues family has farmed its sandy-clay terroir since the 1970s. Four traditional grapes — Baco 22A, Ugni Blanc, Colombard and Folle Blanche — are distilled in the region's signature continuous column still, then rested in local Gascony oak. Pour it neat in a tulip glass after dinner and let it slowly open.
