Here's mezcal with real patience behind it: tepeztate agave can take up to 14 years to mature before it's ever harvested. Mezcalero Apolonio Patricio Lopez roasts and distills it in San Agustin Amatengo, Oaxaca, fermenting with wild yeast over five to six days and running it through copper stills.
