Banhez turns its attention to Jabalí, a rare wild agave named for its resemblance to a boar's spiny hide and prized by mezcaleros for how stubbornly it resists distillation. Grown around San Andrés Zabache in Oaxaca's central valley and coaxed through a natural six-day fermentation, this joven bottles at 47% ABV with a citric, light-bodied character — think wet stone, lactose, ripe orchard fruit, and a whisper of herbaceous conifer. Sip it neat to track how the profile unfolds, or pour alongside grilled vegetables and citrus-forward ceviche.
