Cuishe is one of the more elusive agaves in Oaxaca, and Banhez captures it beautifully. Made by a cooperative of dozens of families in San Miguel Ejutla, this joven roasts agave in underground wood-fired pits, mills it with a donkey-pulled tahona, and distills in copper pots at 47% ABV. Expect guava and lime leaf up front, eucalyptus and pine, then cracked pepper over a clean, earthy finish. Sip it neat in a copita and let it open up.
