Baluarte's Anejo starts in the Highlands of Jalisco, where Tequilana Weber agave is still cooked the old way, in brick ovens, before double distillation in copper-column stills. Fifteen months in oak turn out a gold, coppery spirit that's soft and silky, layered with caramel, vanilla, banana, and cherry riding alongside toasted oak. It's picked up gold medals from San Francisco to Chicago. Pour it neat in a rocks glass, or sip it slowly after dinner to let those barrel notes unfold.
