Long before Texas whiskey was a category, Balcones was reviving it—founded in Waco in 2008 as the first legal whiskey distillery in the state in over a century. True Blue is pot distilled from 100% Hopi blue corn grown in New Mexico, aged in small oak barrels, then cut to 100 proof. Expect charred corn and vanilla custard on the palate, with dried cherries and toasted coconut lingering after. It took the World Whiskies Awards' top corn-whisky prize in 2018. Pour it neat to let the corn shine.

Tasting notes

Nose: Rripe apricots & mango with cinnamon, singed sugar on top of cocoa and dried chillies

Palate: Deep oak and char, black tea and salty baking chocolate, old leather, roasted corn and coffee

Finish: Lingering dried cherries & blackberries followed by toasty bitter chocolate with pleasant oak tannins
