Azuñia's Añejo comes from Rancho Miravalle, a family-run estate at the foot of Volcán de Tequila in Amatitán, Jalisco, where hand-harvested Weber Blue agave piñas roast 36 hours in traditional clay hornos before wild-yeast, open-air fermentation. Double-distilled and rested up to 18 months in American oak, it settles into caramel, vanilla and baking-spice notes with a buttery, chocolate-tinged finish and a touch of oak and pepper up front. Pour it neat in a snifter, or let it anchor a tequila Old Fashioned.
