Ayate's añejo comes from winemaker Dave Phinney's playbook: source excellent raw material, then finish it in wine barrels. The 100% agave spirit starts in Jalisco's highlands at 7,000 feet, where the Ramirez family hand-selects agaves aged 6-8 years and distills in copper pots. Twelve months of aging follows — new American oak, then French oak, then a Chardonnay-barrel finish — building layers of caramel, butterscotch, dark chocolate and toasty spice. Pour it neat in a snifter and let it open up.
