Axe and the Oak, one of Colorado Springs' first craft distilleries, rests its Citra-hopped gin in new American oak for two years — closer to bourbon-making than classic gin. It pours at 100 proof, opening with juniper, vanilla ice cream, and lemon curd on the nose, then orange cream, vanilla bean, light oak, and lemon meringue on the palate, like an orange creamsicle all grown up.
