Most Scotch gets distilled twice. Auchentoshan, a Lowland distillery just outside Glasgow, runs its spirit through the stills three times, and you can taste the difference: this 12 Year is unusually light and smooth. Aged in ex-bourbon American oak and Oloroso sherry casks, it opens with sweet pastry and citrus, then turns to vanilla, hazelnut, tangerine and lime before a gently gingery, nutty finish. Pour it neat or over a single big cube and let it stretch out.
