Four years in ex-bourbon American oak usually means the wood runs the show, but this extra añejo from Jalisco's El Llano distillery keeps the agave front and center. The Orendain brothers ferment their lowland blue agave naturally in stone tanks, then let it rest 48 months until it turns amber and layered: salted caramel and vanilla trading off with cedar, tropical fruit, and a gentle peppery snap. Pour it neat or over one big cube and give it room to open up.
