This one starts with a field blend of a dozen heirloom apples — Sierra Beauty, Gravenstein, Black Arkansas — cold-fermented into cider, then pot-distilled with fresh fruit for extra depth. St. George ages the result in a mix of French and American oak that previously held cider, whiskey, and wine, blending vintages three to twelve years old. Expect dry cider and green apple up front, apple pie and clover honey on the palate, sage and jasmine tea trailing off. Great in a Sidecar or poured neat.
