Amatiteña Reposado comes from a single estate in Amatitán, Jalisco, where blue Weber agave is still cooked in a mesquite-fired stone oven and crushed by an old-school tahona wheel before fermenting in open wood tanks. After distilling in wood-fired copper pot stills, it rests two months in massive French oak pipon casks. Expect butterscotch and light resin on the nose, roasted carrot and honey on the palate, finishing warm with baking spice. Sip it neat to catch the layers.
