Colombian aguardiente is cane spirit turned aromatic with anise, and Industria Licorera de Caldas has made this one in Manizales for generations. The name goes back to the aguardiente of Manzanares, a Caldas hill town, where Juan de Dios Echeverri worked out the formula at the local zacatín.
