Sacatoro isn't a variety you see often — this wild Agave angustifolia grows untouched in Guerrero's hills for roughly a decade before harvest. Maestro Gilberto Rodan roasts it in a conical stone oven, crushes it with a tahona, then lets it ferment wild in pine tinas before a run through copper stills topped in wood. The joven mezcal opens with leather and toasted peanut, moves into fig, ripe mango, and avocado leaf, and finishes with a touch of caramel. Pour it neat and take your time.
