Amarás means "you will love" in Spanish, and this joven espadín makes the case with restraint rather than smoke. Made from mature Oaxacan espadín roasted in conical earthen ovens, crushed by a horse-drawn tahona, then fermented in open pine and distilled in copper pots. Expect a light, floral pour: bergamot and cherry blossom on the nose, ripe mango and sandalwood on the palate, a salted, cinnamon-kissed finish. Sip it neat at room temperature, or let it anchor a bright mezcal cocktail.
